Pasta with Sun-Dried Tomato Sausage

1 pound dried pasta (penne, gemelli, rotini)
2 tablespoons olive oil
4 Aidells Sun-Dried Tomato & Mozzarella Sausage links (sliced 1/4-inch thick)
1 cup sliced zucchini
1 roasted red pepper, sliced
2 cloves garlic, chopped
1 cup white wine
1 cup chicken stock
2 tablespoons basil, chopped
1/2 cup grated Parmesan
salt and freshly ground black pepper to taste


  1. Cook pasta according to package.

  2. Slice sausage into 1/4" disks and heat until slightly browned.

  3. Heat oil with salt, garlic and tomatoes. Toast pine nuts.

  4. Drain pasta and place in a large pasta bowl, top with sausage tomato mixture, pine nuts and basil. Toss and serve with heated French bread. This is also good cold.
