Jasmine Rice with Pineapple Bacon Sausage

1 package Pineapple and Bacon Chicken Sausage (Sliced)
6 ounces Pineapple tidbits in pineapple juice (juice reserved)
1/4 cup Lite Coconut Milk (use in place of 1/4 cup water for rice)
1/4 cup pineapple juice (use in place of 1/4 cup water for rice)
1 cup Jasmine rice (Cook according to package instructions)
1 yellow onion (diced)
4 slices bacon, cooked crispy (chopped)
2 tablespoons butter (unsalted)


  1. Cook Bacon and let cool, set aside.

  2. Cook jasmine rice according to package instructions, substituting 1/2 cup water with 1/4 juice and 1/4 coconut milk. Set aside and keep warm.

  3. Melt butter in sauté pan and cook onion until slightly browned and fragrant, add pineapple and sausage. Cook over medium heat 5-8 minutes or until sausage is warmed throughout. Add rice to skillet and mix together, reduce heat to low and cook 2-5 minutes.

  4. Serve with crumbled bacon on top...Enjoy!
