Spicy Sausage Skewers

2 red bell pepper, cut into 1-inch squares
2 red onion, cut into 1-inch chunks
1 pineapple, cut into 1 inch cubes
1 package baby portobello mushrooms, cut in half
12 metal or bamboo skewers


  1. Heat grill to Medium-High heat. Put ingredients on skewers in alternating order (e.g. bell pepper, sausage slice, onion, sausage, pineapple, sausage, mushroom, sausage etc.). After all ingredients are used up, place skewers directly onto grill. Cook until veggies are tender with slightly crispy edges. Serve with a melon salad and enjoy.
