Spicy Mango Jalapeño Sausage Pot Luck

1/3 cup onion (chopped)
1 zucchini (sliced)
1 brown or wild rice (package, already cooked)


  1. Stir fry the sliced sausage over medium heat.

  2. Add chopped onion and sliced zucchini and sauté until zucchini is tender and crispy.

  3. Add the pre-cooked brown rice. When completely heated, it's ready to eat.

  4. (Optional) Serve with a salad.

  5. COOK NOTE: Per my calculations, this entrée has only about 310 calories.
