Cabbage with Chicken & Apple Sausage Skillet

INGREDIENTS

1 tablespoon grapeseed or canola oil
1 package ALL NATURAL* CHICKEN & APPLE SMOKED CHICKEN SAUSAGE, each link sliced into four pieces
3 tablespoons unsalted butter
1 large red onion, thinly sliced
1/2 red cabbage, thinly sliced
kosher salt
1 large Granny Smith apple, cored and sliced 1/4"
2 sprigs fresh thyme
1/3 cup chicken stock
1/2 cup apple cider
1 tablespoon fresh lemon juice
freshly ground black pepper

COOKING INSTRUCTIONS

  1. Heat a large skillet that has a lid over medium heat. Add grapeseed oil, then sausage pieces. Sauce sausage until browned and heated through; remove and reserve, kept warm.

  2. Return skillet to medium heat and add butter. When hot and foaming, add the sliced onion and red cabbage, along with a good pinch of salt. Cook, stirring, until the onion and cabbage begin to soften and wilt. Stir in the apples, thyme and the chicken stock. Bring to a simmer, cover pan with lid and reduce heat to low. Cook 15-20 minutes, stirring halfway through, or until the onions and cabbage have soften and the contents are melding.

  3. Remove lid and add the cider and lemon juice; stir to combine. Add the sausage. Allow to simmer, stirring occasionally until the juices reduce some and the dish is warmed throughout. Taste and correct for salt if needed, and grind in black pepper to taste.
