Sausage Sandwich with Brie and Red Pepper Coulis

4 large red bell peppers, roasted, seeded and peeled
2 cloves garlic
1-2 cups olive oil
salt, pepper and fresh lemon juice to taste
1 sweet baguette, cut for sandwiches
3-4 ounces brie


  1. For the sauce, combine: red pepper, garlic, olive oil, salt, pepper and lemon juice to taste in a blender or food processor. Process until smooth.

  2. Grill the sausages over medium-hot coals for 2 minutes or pan-fry for approximately 10 minutes until nicely browned and thoroughly heated. Place each sausage in a roll and top with brie and red pepper sauce.
