Spaghetti with Sausage and Fresh Tomato Sauce

Share This Recipe:

1 pound dried spaghetti or other long pasta
1 tablespoon olive oil
3/4 cup white wine
2 tablespoons tomato paste
2 ripe tomatoes, chopped
25 basil leaves, chopped

  1. Cook the spaghetti in a large pot of well-salted boiling water until al dente, about 8-9 minutes. Drain.

  2. Meanwhile, heat the olive oil in a skillet over medium heat. Add the sausage and brown for 4-5 minutes, crumbling as it cooks. Add the wine and tomato paste, stir well and cook for 5 minutes longer. Add the chopped tomatoes and cook for 2 more minutes. (At this point you can add other ingredients of your choice—cooked vegetables, chopped chicken, nuts, etc.) Add the chopped basil.

  3. Toss the drained pasta with the sauce. Transfer to a platter and serve.
