Sausage Noodle SoupShare This Recipe:
1 pound package udon (thick noodles)
2 quarts chicken stock
4 ALL NATURAL* CHICKEN & APPLE SMOKED CHICKEN SAUSAGE, cut into 1/2-inch diagonal slices
1 carrot, grated
2 green onions, sliced
1/4 cup celery, sliced
1/2 cup bok choy, thinly sliced
salt and freshly ground black pepper to taste
Cook noodles according to package directions. Drain and rinse under cold water and set aside.
Heat chicken stock in large pot. Add sausage, carrot, green onions, celery and bok choy, and season to taste. Simmer 5-10 minutes to lightly cook vegetables.
Divide noodles among 6 bowls.
Ladle in soup and serve.
