Dinner
Ingredients
2 Sliced Aidells Italian Sausage
6oz Rigatoni Pasta
⅛ cup Quartered Black Olives
¼ cup Diced Red Bell Pepper
¼ cup Diced Yellow Onion
1 tbsp Minced Garlic
¾ cup Ricotta Cheese
1 Egg
¼ cup Heavy Cream
⅓ cup Shredded Parmesan Cheese (plus 2-3 tbsp for topping)
¼ cup Chopped Spinach
¼ cup Pasta Water
1 tbsp Black Pepper
1 tbsp Salt
Directions
1. Cook rigatoni pasta in boiling water until al dente, about 6-8 minutes. Strain and set aside saving ¼ cup pasta water.
2. In a large sauté pan add garlic, onion, sliced sausage, red bell peppers, salt, and pepper and cook until soft and sausage are browned slightly, about 5-8 minutes.
3. In a large bowl combine the ricotta cheese, heavy cream, ⅓ cup shredded parmesan cheese, chopped spinach, egg, and sautéed vegetables and mix until everything is combined.
4. To the same bowl add the cooked pasta and mix again until everything is well combined. Transfer to a baking dish and top with more parmesan cheese.
5. Cover with aluminum foil and bake in the oven for 15 minutes at 350*F. Then remove foil and bake for an additional 5 minutes until cheese is browned on top.
6. Remove from the oven and rest for a few minutes and serve.
