Mango Sausage Thai Salad

4 tablespoons fresh lime juice
3 tablespoons packed brown sugar
1/4 cup peanut oil
1/4 cup chopped mint leaves
1/2 cup chopped fresh cilantro
1 cup chopped Thai basil
1 4-inch long fresh hot red chili, thinly sliced, including seeds
2 medium shallots, thinly sliced
2 avocados, pitted, peeled, and cut into chunks
2 firm-ripe mangoes, pitted, peeled, and cut into chunks
6 cups mixed salad greens
1/2 cup chopped roasted peanuts (optional)


  1. Sauté the sausage in a non-stick skillet for 8-10 minutes. Remove from the pan, cool and slice into ¼-inch rounds. Set aside.

  2. Whisk together brown sugar and lime juice in a large bowl until sugar is dissolved, then whisk in peanut oil until well mixed. Add in red chili, shallot, cilantro, mint, basil and stir to combine.

  3. Put salad greens, mango and avocado in a large bowl, pour dressing on and mix well. Mix in sausage rounds and serve in bowls. Sprinkle on chopped peanuts if desired
