1 packagePineapple and Bacon Chicken Sausage (Sliced)
6 ouncesPineapple tidbits in pineapple juice (juice reserved)
1/4 cupLite Coconut Milk (use in place of 1/4 cup water for rice)
1/4 cuppineapple juice (use in place of 1/4 cup water for rice)
1 cupJasmine rice (Cook according to package instructions)
1 yellow onion (diced)
4 slicesbacon, cooked crispy (chopped)
2 tablespoonsbutter (unsalted)
Cook Bacon and let cool, set aside.
Cook jasmine rice according to package instructions, substituting 1/2 cup water with 1/4 juice and 1/4 coconut milk. Set aside and keep warm.
Melt butter in sauté pan and cook onion until slightly browned and fragrant, add pineapple and sausage. Cook over medium heat 5-8 minutes or until sausage is warmed throughout. Add rice to skillet and mix together, reduce heat to low and cook 2-5 minutes.
Serve with crumbled bacon on top...Enjoy!
