Asian Grilled Shrimp, Fish and Mango Sausage

INGREDIENTS

1/4 cup soy sauce
1/4 cup fresh orange juice
1 tablespoon fresh grated ginger
2 tablespoons brown sugar
2 4-6 oz fillets of white fish (halibut, sea bass, etc.)
1/4 pound shrimp (peeled and deveined)

COOKING INSTRUCTIONS

  1. In a large non-reactive mixing bowl, combine the soy sauce, orange juice, ginger and brown sugar, stirring to dissolve the sugar. Toss the fish and shrimp in the mixture and let stand, refrigerated, for 30 minutes to one hour. Remove the seafood from the marinade and pat dry. Thread the shrimp on bamboo skewers for easier grilling. Pour the marinade into a small pot and bring to a boil, either on your barbecue or on the stovetop. Place the sausage and fish on a hot grill and grill for 2-3 minutes per side, brushing with the boiled marinade. When the sausage and fish are almost done, place the shrimp on the grill and cook 30 seconds to 1 minute per side. Remove from the grill and serve.
