Sausage Hash

INGREDIENTS

2 pounds red potatoes, cut into a ½-inch dice
1 large onion, cut into a ¼-inch dice
1/2 stick unsalted butter
1 package Aidells cajun style andouille sausage (4 links), cut into a ½-inch dice
1/2 cup red bell pepper, ¼-inch dice
1/4 cup finely chopped green onions
1/2 cup green bell pepper, ¼-inch dice
1/4 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon cayenne
salt and freshly ground black pepper to taste to taste

COOKING INSTRUCTIONS

  1. Over medium heat, sauté the potatoes and onions in butter for 10-15 minutes, stirring occasionally. Add the sausage, bell peppers, salt, black pepper and cayenne, and continue sauteeing until the sausage is browned, about 5 more minutes. Add more salt and pepper to taste and serve garnished with green onions. Serves 4-6
