Trio of Tasty Dipping Sauces for Meatballs

INGREDIENTS

Teriyaki Dipping Sauce
1/2 cup brown sugar
2 teaspoons corn starch
1 teaspoon ginger (ground)
1 cup soy sauce
2 tablespoons water
1/2 cup crushed pineapple
2 cloves garlic (minced)
Sweet Chili Dipping Sauce
1/3 cup sugar
2 tablespoons cornstarch
1/2 teaspoon chili flakes
1/2 cup rice vinegar
1/4 cup water
1 tablespoon Sriracha sauce
1 teaspoon garlic (minced)
1 teaspoon ginger root (minced)
Mango Dipping Sauce
2 mangos (diced)
1 tablespoon honey
1 lime (juiced)
1 tablespoon pineapple juice
1 jalapeño pepper (minced, optional)
1 tablespoon fresh herbs (finely chopped)
1 pinch salt

COOKING INSTRUCTIONS

  1. For the Teriyaki Dipping Sauce, stir together brown sugar, corn starch and ginger in a small non-reactive saucepan. Add soy sauce, water, pineapple, and garlic. Cook over medium heat until thickened and bubbly. Cook and stir for 2 minutes more. Transfer to a bowl and chill for at least 1 hour. Serve with meatballs.

  2. For the Sweet Chili Dipping Sauce, stir together sugar, corn starch and chili flakes in a small non-reactive saucepan. Add rice vinegar, water, Siracha sauce, garlic, and ginger. Cook over medium heat until thickened and bubbly. Cook and stir for 2 minutes more. Transfer to a bowl and chill for at least 1 hour. Serve with meatballs.

  3. For the Mango Chili Dipping Sauce, combine mango, honey, lime juice, jalapeño, herbs, and salt in a medium bowl. Chill 1 hour before serving, if desired. Serve with meatballs.
