Sun-Dried Tomato Sausage Sandwich with Tomato Vinaigrette


  • 1/2 package Aidells Sun-Dried Tomato Sausage
  • 1 sweet baguette, cut into sandwich-size portions or 4-6 Italian rolls
  • Vinaigrette
  • 3/4 cup ripe, fresh tomatoes
  • 3 tablespoons balsamic or raspberry vinegar
  • 1/3 cup olive oil
  • 1/4 cup chopped, fresh basil
  • 2 anchovy fillets, finely chopped
  • salt and freshly ground pepper to taste

Cooking Instructions

  1. Grill the sausages over medium-hot coals for 5 minutes or pan-fry in 1 tablespoon of olive oil for approximately 10 minutes until nicely browned and thoroughly heated. Combine all the vinaigrette ingredients in a bowl and whisk together. Place the hot sausage on a roll and spoon on the vinaigrette.
