1 sweet baguette, cut into sandwich-size portions or 4-6 Italian rolls
3/4 cupripe, fresh tomatoes
3 tablespoonsbalsamic or raspberry vinegar
1/3 cupolive oil
1/4 cupchopped, fresh basil
2 anchovy fillets, finely chopped
salt and freshly ground pepper to taste
Grill the sausages over medium-hot coals for 5 minutes or pan-fry in 1 tablespoon of olive oil for approximately 10 minutes until nicely browned and thoroughly heated. Combine all the vinaigrette ingredients in a bowl and whisk together. Place the hot sausage on a roll and spoon on the vinaigrette.
