Apple Walnut Smoked Sausage Salad


  • 2 tablespoons balsamic vinegar
  • 2 teaspoons dijon mustard
  • 1 teaspoon honey
  • 1/4 cup extra virgin olive oil
  • salt and freshly ground black pepper to taste
  • 4 Aidells Chicken Apple Sausage links, chopped
  • 1 pound butter lettuce, torn into bite-size pieces
  • 6 ounces toasted walnuts
  • 4 ounces crumbled blue cheese
  • 2 Granny Smith or Braeburn Apples, cored and thinly sliced

Cooking Instructions

  1. In a small bowl, whisk together the vinegar, mustard and honey. While whisking, slowly drizzle in the olive oil. Season to taste with salt and pepper.
  2. In a saute pan over medium high heat, saute the sausage about 5 minutes, until brown. Set aside to cool.
  3. Toss the butter lettuce in the vinaigrette and arrange on a platter. Arrange the cooked sausage, walnuts, cheese and apples on top.
