| 1 | lb | rotelli or other curly pasta |
| 1 | T | olive oil |
| 4 | Aidells Roasted Garlic & Gruyere Sausage (sliced) | |
| 1 | garlic glove (chopped) | |
| 1 | c | frozen or water packed artichoke hearts (drained and quartered) |
| 1 | red bell pepper (cut into 1-inch pieces) | |
| 1 | lb | broccoli (cut into florets) |
| 1/2 | lb | cauliflower (cut into florets) |
| 1/4 | c | white wine |
| 3/4 | c | chicken stock |
| 2 | t | cold unsalted butter |
| 6 | oz | smoked mozzarella cheese (diced) |
| salt and freshly ground black pepper to taste |

Instructions
Cook the pasta in a large pot of well-salted boiling water until al dente. Drain.
While the pasta cooks, heat the olive oil in a large sauté pan. Add the sausage and sauté for 2-3 minutes, until it begins to brown. Stir in the garlic, artichoke hearts, red pepper, broccoli and cauliflower and sauté another 30 seconds. Stir in the white wine and chicken stock. Bring to a boil, reduce heat and simmer until reduced by half. Stir in the cold butter. Toss with the cooked pasta and cheese. Season to taste with salt and pepper.

Loved it! I actually found
Loved it! I actually found this site last minute and didn't have many of the ingredients. I ad-libbed with the chicken apple sausage, canned peas and vidalia onions (instead of broccoli & cauliflower), and freshly grated parmesan (instead of mozz) -- and it was DELISH!! Can't wait to try the recipe as written!

This was delish! I roasted the sausage with the broccoli, cauliflower, and red peppers then did everything else the same way. It was like a grown-up, veggie filled, sausagey mac & cheese. Thank you very much for this recipe!
