Ingredients
| barbecue sauce | ||
| 2 | T | vegetable oil |
| 1 | large onion, chopped | |
| 2 | cloves garlic, finely chopped | |
| 1 | c | cider vinegar |
| 1/2 | c | coarse grained mustard |
| 2 | c | brown sugar |
| 4 | c | tomato sauce |
| 1/2 | c | finely chopped chipotle chiles, or to taste |
| 3 | lb | country style pork ribs |
| Mixed Grill | ||
| 3 | lb | aidells cajun style andouille sausage |
| 3 | lb | chicken, thighs and legs |
Instructions
In a large saucepan, add the oil and sauté the onions for 3-5 minutes over medium heat until translucent. Add the garlic and sauté 1 minute more. Reduce heat to low and add vinegar, mustard, sugar, tomato sauce and chiles; simmer 45-60 minutes until thick.
Set up your grill for indirect cooking. Be sure to place a drip pan in the bottom of the grill. Season the pork ribs and chicken with salt and pepper, place over the drip pan and cover. Cook, turning occasionally, for 1 hour. During the last 30 minutes of cooking time, baste the meats with the barbecue sauce; repeating each time you turn the meat.
Place the sausage on the grill with the ribs and chicken and cook 15 minutes, turning occasionally.
The meat is cooked when the pork reaches 160° and the chicken reaches 170° on an instant read thermometer.
Cover and allow to rest for 30 minutes before serving. Pass the extra barbecue sauce at the table.
